Adai Recipe
Ingredients:
1 c. of rice
1 tsp. of salt
1/3 c. of urad dal
1 tsp. of powdered (red)
1/3 c. of chana dal
1 lg. onion (optional)
1/3 c. of split peas (yellow)
1 pc. of carrot (optional)
1/4 c. of grated coconut (optional)
Instructions:
Mix the peas, rice, urad and chana dal into a big bowl. For around two hours, soak them in water. Add salt and chili into mixture without having more water added.
For around three to four hours, ferment mixture then freeze or refrigerate. The fermentation will be longer if weather is cold, and using the oven is a fine idea with the light keeping the confection warm.
Add minced onion, coconut or grated carrots prior to serving. When freezing, fermentation should only be for around 1 hour since mixture needs to stand by for some time before it can be used. This serves 6.
