Aloo Gobi Masala Recipe
Ingredients:
12 ozs of diced potatoes
20 ozs of cauliflower (florets)
1 lg tomato; slice into dices
1/2 tsp of basil leaves
8 ozs of onions; sliced thin
A pinch of salt and cayenne
1/2 tsp of turmeric
1 oz of lemon extract
1 tsp of cumin seeds
2 cloves of garlic
1/2 pc of ginger
Canola oil
2 ozs of vinegar
4 ozs of cilantro leaves
2 pcs of scallions
1 pc of jalapeno
Instructions:
Boil florets and diced potatoes with cayenne, salt, 1 tablespoon of canola oil and turmeric. Take out cauliflower since they are going to be finished before potatoes.
Vegetables must be well-done at the same time firm. Next, grind the garlic and ginger. Use powdered ginger (1/2 tsp) if no fresh is available. Mince cilantro, jalapeno and scallions.
Mix the sliced onions with vinegar, olive oil and basil. Marinate this for 10-15 min. Using a small-sized wok over temperate heat, put a tablespoon of canola.
Once hot, mix in cumin. Fry ’til brown (light). Adding onions to it, cook ’til opaque. Next, add garlic and ginger. Saute this for some minutes.
Mix in cauliflower, tomato and potatoes. Pour in some water; it prevents vegetables from sticking to pan.
Simmer this ’til vegetables are cooked. Sprinkle lemon extract, chopped tomato and minced cilantro for serving.
