Aloo Saag Recipe
Ingredients:
4 Tbsps of oil
4 pcs of curry leaves
1 pc of chopped onion
6 pcs of fenugreek seeds
2 pcs of tomato; sliced
1/4 tsp of kalonji
1 tsp of garlic pulp
6 pcs of potato
1 tsp of chili powder
9 ozs of spinach; frozen
1.5 tsp of coriander
1/4 pt of water
1 tsp of salt
2 pcs of red chiles; chopped up
10 pcs of ginger; shred them up
1.5 tsp of powdered mango
2 Tbsps of chopped cilantro
Instructions:
Heat the oil. Saute curry leaves, onion, fenugreek and kalonji ’til color changes. Reduce to temperate heat and add tomatoes, chili, garlic, salt, powdered mango and coriander.
Fry and stir for about 3-5 minutes, and then add potatoes and spinach. Continue stir-frying for about 5 min. Pour in water and cover. Over minimal heat, cook for about 10-15 minutes.
After potatoes are done, add chiled and cilantro. Stir well and transfer into serving bowl. Use minced ginger for garnishing. Serve along with some chapatis. This serves 4.
