Alu Matar (Potatoes & Peas In Onion-Tomato) Recipe
Ingredients:
2 pcs of medium-sized onions
1.5 lb small-sized potatoes
3 cloves of garlic
1/2 pc of fresh ginger
3 Tbsps of vegetable oil
A pinch of crushed asafoetida
1/2 tsp of cumin seeds
A pinch of salt
1/4 tsp of cayenne pepper
2 lg chopped tomatoes
1/2 tsp of ground turmeric
1 c of peas
1/2 tsp of garam masala
1/4 c of water
Instructions:
Cook potatoes ’til tender. Set them aside after peeling. Put the following through the food mill to mince: garlic, ginger and onions. Using your large skillet, warm oil over temperate heat.
Mix cumin and asafoetida. After 1-2 seconds, add minced mixture then saute ’til it browns (around 12 min.).
Add turmeric, tomatoes, cayenne and salt. Cook ’til it softens (around 5 min.). Next, add water and peas. Minimize heat and cover.
Cook this for about 5 min. If it’s too big, halve cooked, add to pan then continue cooking for about 5 more minutes. Add garam masala prior to serving. This serves 4.
