Am Ka Achar (Mango Pickle) Recipe
Ingredients:
24 unripe mangoes
3 Tbsps of salt
4 c of oil
1 Tbsp of cumin seed (white)
1 Tbsp of onion seed
1 c of red-chili powder
1 Tbsp of coriander seed
1 Tbsp of mustard seed
1 Tbsp of garlic (ground)
Instructions:
Wash mangoes thoroughly then pat dry. Slice into four.
Add salt to mangoes then arrange on baking sheets then dry under the sun for 2-3 days ’til skin turns pliable and soft.
Fry your mango cuts in two cups oil ’til light-brown. Remove them from oil then grind finely to create a smoothened paste, then set it aside.
Heat remaining oil in saucepan. Add remaining ingredients then stir-fry for a minute. Blend in dried mangoes. You stir everything together quickly then remove pan from fire immediately. Cool.
Transfer into tightly sealed containers then have them stored in room temp.
