Am Ka Murabba (Green Mango Preserve) Recipe
Ingredients:
2 pounds of mangoes
2 ounces of toasted almonds
6 drops of Kewra-essence
8 pcs cardamom seeds (green)
1 & 1/4 pt of water
1 tsp of citric-acid
3 pounds of sugar
Instructions:
Have your mangoes washed, peeled and sliced into equal large cuts then prick it all around using your fork. Loosely tie your mango cuts in muslin piece then simmer about 5-7 mins in 1 & 1/4 pt boiled water.
You remove then have them dried on one cloth piece. Add acid and sugar into water where the mangoes were slowly boiled. Let it cook ’til it creates a thin thread stream.
Add the mango cuts then simmer slowly ’til syrup is thick & mangoes are bit translucent and are tender. Leave them for twelve hours.
Your remove fruit cuts from syrup. Tie your cardamom-seeds in muslin piece then add into syrup. Have it boiled again ’til single-thread consistency.
You remove muslin w/ seeds then squeeze juice out. Throw away used seeds. You add fruit cuts & toasted almond halves that were peeled. Continue cooking for few more mins.
Remove pan from fire then cool. You add the essence then pour preserve into heated, cleaned glass containers.
Put just enough amount, place one disc w/ 2-3 layers waxpaper over mouth-part of container then cover it w/ screwcap.
