Anai Pachadi Recipe
Ingredients:
1 butternut-squash (small)
3 Tbsps of coconut
1/2 tsp of mustard seed
Turmeric
3 chilies (green)
1 tsp of tamarind-paste
Jagery or sugar
Salt
Fenugreek
Chili (red)
Leaves of curry
Oil
Instructions:
Cut the squash evenly into 1 x 1/4-inch slices, then wash them thoroughly. Add them into 1.5 water together w/ your tamarind-paste.
Add the salt & turmeric then cook mixture on low-heat ’til done. You grind together the coconut, chilies (green), and mustard seed. Stir this into prepared squash.
Allow the mustard-seeds to splatter into oil then add the fenugreek, chili (red), and leaves of curry. Cook for about 2 mins then pour into previously made mixture.
