Apricot Chutney With Raisins & Currants Recipe
Ingredients:
10 pounds of dry apricots
1 peeled ginger slice (1×3-inch); chopped coarsely
2 c of sugar
1/8 tsp of cayenne-pepper
1/2 c of currants
10 cloves garlic (large); peeled and chopped coarsely
1 & 1/4 c of red-wine vinegar
1/4 tsp of salt
3/4 c of raisins
Instructions:
Pour over 4 c of heated water into apricots the have them soaked for 60 mins. Put ginger and garlic into blender w/ 1/4 c vinegar and blend well ’til smooth.
You empty your apricots. Transfer into porcelain lined pot together w/ the soaking fluid. Add your ginger-garlic mixture, rest of salt, vinegar, cayenne and sugar.
Let it boil then simmer over mid-heat for about 45 mins, stir frequently. Adjust heat as necessary. You add in the currants & raisins.
Stir while cooking for another 30 mins or ’til chutney appears like a thickened glaze. Cool completely then store in ceramic containers. Refrigerate.
