Avocado Kashmir Recipe
Ingredients:
2 Tbsps of ghee
1/2 tsp of chili seasoning
1/2 tsp of coriander
2 c of chopped eggplant; cooked
1 tart apple (small); peeled and diced
A can cream-of-chicken soup
Lemon juices
1 c of rice
1/2 tsp of cumin (ground)
1/2 tsp of turmeric
1 chopped onion (small)
Pepper
Salt
3 halved avocados
Raisins
Peanuts (whole)
Chutney
Coconut (toasted)
Scallions
Lime
Kumquat preserves
Bacon (crumbled)
Instructions:
Have the ghee heated in small skillet then add the apples and onion. Saute ’til limp. You add the soup, pepper and salt. Heat mixture over low-heat ’til smoothened.
Add the eggplant. Put rice into 1 & 1/2 c water. Have it covered and steamed ’til tender. You peel the avocados then rub them w/ juice.
Place every avocado piece on rice mound placed on individual salad platters. Fill w/ curry mix. Place your condiments on other dishes then serve.
