Badami Gosht Recipe
Ingredients:
5 Tbsps if oil (vegetable)
1 chopped onion (large)
6 pcs cloves
1.5-inch peeled ginger; chopped
1 & 1/4 c of plain yogurt
1 tsp of saffron-threads soaked into 2 Tbsps of boiled water
1 tsp of salt
1/2 tsp of chili seasoning
2 dry chilies (red)
2 sticks of cinnamon
1 Tbsp of cardamom seed
2 cloves garlic; crushed
1.5 pound of cubed lean lamb
1/2 c of almonds (ground)
1.5 c of coconut
Instructions:
Have oil heated in saucepan then add cardamom, cinnamon and cloves. Fry them for 60 secs. Add onion then stir-fry ’til soft.
You add ginger & garlic then continue frying for another 3 mins. Add in the cubed lamb then fry ’til thoroughly browned. You beat your yogurt, chili-paste and saffron mix.
Stir this mixture carefully into cubed lamb. Have it cooked for a minute. You beat your almonds w/ sufficient amount of water in order to have a thickened paste.
Add this into cubed lamb together w/ salt. Let mixture simmer about 15 mins. Add in the coconut-milk & chilies then reduce to low-heat.
Continue simmering for about 1 hr or ’til meat is well-cooked & is tender. Remove the pan-cover 10 mins before cooking is done. Transfer into warmed platters.
