Baida Paratha Recipe
Ingredients:
2 c of whole-wheat flour
2 tsps salt
2 Tbps of ghee plus enough amount for frying
4 large boiled eggs; mashed
1 tsp leaves of coriander
1/2 tsp of pepper
Cilantro-water
Ingredients:
Sift 1 teaspoon salt and flour together into bowl. Add the water gradually to create a stiffened flour. Have it covered w/ dampened cloth. Set aside about 20 mins.
Add pepper, 1 teaspoon of salt, 1 teaspoon ghee and coriander into mashed eggs. Mix well.
Knead your dough ’til smooth. Have it divided into eight even parts then roll into 4-inch diametered circle. Scoop a tablespoonful of egg-filling into center part of every circle.
Form into rounded dough balls. Roll every ball into floured surface into 5-inch diameter circles. Lightly rub each w/ ghee/oil on 1 side.
Have the griddle heated, shallow-fry every paratha w/ little amount of ghee. Cook ’til every side is golden-browned.
