Baigan Aur Tamaatar Recipe
Ingredients:
1/2 pound of eggplant
1 finely chopped onion (small)
1/2 tsp of turmeric
3/4 tsp of cayenne-pepper
1 stick of cinnamon
2 tomatoes (medium)
2 Tbsps of ghee
1/2 tsp of salt
1 clove garlic; sliced
Bay leaf
1/2-inch slice of ginger (fresh)
1 tsp of Garam-masala
Instructions:
Have the eggplants washed and sliced.
Heat the ghee and saute garlic and onions for 2-3 mins. Add the bay-leaf, cinnamon, and turmeric. Saute them for about 2 mins. Stir frequently.
Add in the sliced aubergines then add cayenne, ginger and salt. Combine everything well then cook it for about 10 mins. Add the tomatoes in. Have the pot covered then continue cooking for additional 10 mins.
Sprinkle w/ Garam-masala then serve.
