Baigan Bharta (Mashed Eggplant) Recipe
Ingredients:
2 eggplants (medium)
Garlic
Oil
Ginger (chopped)
Onions (chopped)
Pepper
Salt
Cilantro (chopped)
2 finely chopped tomatoes
Instructions:
Poke your eggplants w/ sharp-edged knife then insert garlic into slits. Have your eggplants roasted in slow coals. When done, peel them & mash its insides. Cut its long fibers w/ knife.
Have oil heated in wok then you add in ginger and onions. Fry ’til onions turn semi-brown. Add in mashed eggplants. Season w/ pepper and salt. Add in cilantro. Add the chopped tomatoes as desired.
