Bandhakopir Ghanto Recipe
Ingredients:
2 & 1/2 Tbsp of oil (mustard)
1/2 tsp seeds of cumin
1 tsp of chopped chile (green)
3/4 tsp of salt
1 & 1/4 tsp of sugar
1/2 c of cooked peas (green)
Ghee
3/4 pound of cubed lamb
6 c of cabbage; shredded finely
1/4 c of water
1/2 tsp of turmeric
1/2 tsp of Garam-masala
A dash of cayenne
Instructions:
Have 2 Tbsp of oil heated in Dutch-oven. Add your cubed lamb then saute for 10 mins ’til medium-brown, stirring it often. With a slotted-spoon, have the meat removed from oil then set them aside.
You add the rest of oil. Fry the cumin-seeds quickly then you add your cabbage, water and chile. Adjust the heat and cook without cover for 8 min ’til cabbage turns limp, stir it often.
Add your salt, sugar, turmeric, cayenne and 2 Tbsp of water. Have it covered then allow to simmer ’til tender. Add your peas then continue cooking for two more mins.
Remove pan from direct heat and add garam-masala. Stand w/ cover for few mins then sprinkle w/ ghee as you please.
