Beet Curry Recipe
Ingredients:
3 Tbsps of ghee
Bayleaf
1/4 tsp of cayenne
1 potato (medium); diced
15 ounces of cooked beets; diced
A pinch of cumin seed
2.5 Tbsps of spiced-onion
1/4 tsp of garam-masala
1/2 c of peas (green)
1/2 tsp of salt
Instructions:
Heat the ghee and fry the cumin-seeds, bayleaf, onions, garam-masala and cayenne for one minute.
You add the peas, potato and beets. Gently cook for about 2 mins. Add a bit of water and salt. Gently cook ’til potato turns tender. Best when served w/ rice.
