Begun Kalia – Colorful Eggplant Recipe
Ingredients:
2 pounds of eggplants (small)
2 Tbsps of oil
6 crushed whole cardamom
1 tsp of turmeric
4 c of ghee
1 c of yogurt
6 pcs cloves
1 cinnamon stick; crushed
1 tsp of salt
1 cinnamon stick; crushed
Instructions:
Cut eggplants in lengthwise fashion. Have the ghee heated in pan & fry the pieces of eggplants ’til tender and browned. Drain them on paper-towels.
In separate pan, you heat 2 Tbsp oil then add the cloves, cinnamon and cardamom. Fry them for 30 secs. You add the cayenne, turmeric, salt and yogurt. Reduce the heat & simmer it for 2 to 3 mins.
Add the cooked eggplants, spoon the yogurt mix into eggplants. Remove them from the heat.
Best when served w/ Indian-bread or rice.
