Begun Posto Recipe
Ingredients:
1 eggplant (medium)
2 dry chilies (red)
1 & 1/2 Tbsps of minced garlic
1/4 tsp of turmeric
2 Tbsps of poppyseeds (white); ground well into paste
1/2 tsp of sugar
2 Tbsps of oil (vegetable)
1/4 tsp of fenugreek-seeds
1 tsp of seeded chili (green); minced
1/4 c of water
1/2 tsp of salt
1 chopped onions (green)
Instructions:
Smoke and smoke your eggplant. Have them cooled, mashed and set it aside.
Have oil heated in skillet placed over mid-heat. Fry the red chilis ’til they turn dark. Add garlic, fenugreek, green-chili then stir ’til garlic is light-brown, avoid burning.
Add the water and turmeric. Allow to boil. Adjust the heat then stir eggplant in. Add the poppyseed-paste, sugar and salt. Mix thoroughly. Let it simmer w/ cover for about 20 mins.
Occasionally stir to avoid sticking. You remove it from the heat and stand mixture for a while before you serve. Garnish w/ green onions.
