Bengal Lancers Shrimp Curry (Jhinka Masala) Recipe

Ingredients:

1 pound of peeled shrimps (medium); deveined but tails left attached
1/2 tsp of salt
1/2 tsp of mustard seed
1/4 tsp of turmeric
1 tsp of cumin seed
1 peeled ginger (1/2-inch piece)
4 cloves garlic; peeled
2 stemmed dry chiles (red)
1 Tbsp juice of lemon
1 c of onion; chopped finely
2 Tbsps of oil (mustard)
1/4 – 1/2 c of water
1.5 c of tomato; shopped
Basmati rice (cooked)

Instructions:

Sprinkle the shrimp w/ turmeric and salt, tossing vigorously to evenly coat. Have it covered then set it aside about 15 mins.

Combine the mustard, garlic, cumin, ginger, juice and chiles in blender then puree. Have the oil heated in large thick skillet placed over mid-heat. You add the onions & cook for 3 mins ’til soft.

You add the pureed mixture & cook. Stir well for 5 mins ’til fragrant. Add the tomatoes & cook ’til soft. You add the shrimp in. Gently stir to evenly coat. Pour water in then boil. Stir constantly.

Adjust to mid-heat then cover & cook for 5 mins ’til shrimps turn opaque. Place a mound of rice in heated platters then spoon the curry in then serve.
