Besan Barfee Recipe
Ingredients:
6 ounces of chick-pea flour
1 c of veggie oil
14 ounces of sugar
1/2 tsp of ground cardamom seed
1 Tbsp of blanched almonds; chopped coarsely
2 Tbsps of unsalted pistachios
Instructions:
Have the flour thoroughly sifted. Then have the oil heated in thick 10 x 12-inch fry pan placed over mid-heat. Place the sifted flour in. Stir & fry it for 2-3 mins ’til its cooked and it turns one color-shade darker. Transfer into bowl then stir to completely cool.
Combine water & sugar the allow it to boil. Gently simmer for 20 mins ’til syrup achieves a thread-like consistency.
Pour your heated syrup into flour mix. Add in cardamom-seeds as well as your nuts then mix thoroughly. Continue stirring til mixture becomes a bit hardened.
Pour mixture into 9-inch square baking pan. Tilt slowly so the mixture will freely flow into pan’s edges. Cool completely. Slice into 3/4-inch cubes.
Wrap tightly in foil then store in plastic containers. Freeze.
