Bhaja Muger Dal Recipe
Ingredients:
1 c of split-mung beans (yellow)
1/4 tsp of turmeric
3/4 tsp of salt
2 tsps of ground cumin
1 & 1/2 tsps of veggie oil
1/2 tsp of kalonji seed
1 tsp of seeded chile (green); minced
2 Tbsps of lemon juice
5 c of water
1 silvered chile (green)
2 chilies (green)
1 tsp of sugar
Bayleaf
3 Tbsps of minced ginger
2 tsps of ground coriander
1/4 tsp of garam-masala
Ghee
Instructions:
Place beans onto griddle over mid-heat. Stir often. You roast it for 8-10 mins. Your dal will have a brighter color and would have a nutty-smell. Avoid burning.
Have it transferred into small bowl then wash as necessary. Boil water then add dal together w/ whole chilies and turmeric. Simmer w/ cover for 35-40 mins ’til dal turns tender.
While you are cooking, remove the cover and occasionally stir the mixture. Add the coriander, cumin, salt and sugar. Keep heated. Have the oil heated in skillet then add bayleaf and kalonji seeds.
Quickly fry then add the minced green-chile and ginger. Fry them for 2 mins ’til ginger turns light-brown, stirring constantly.
You pour your dal in and mix thoroughly. Simmer mixture for few minutes then remove it from the heat. You add the juice, ghee and garam-masala in.
Cover and stand for few minutes to allow flavours to develop.
