Bhopali Roti Recipe
Ingredients:
1.5 c of flour (whole wheat)
2 Tbsps of ghee (or oil salt)
1 tsp cumin (dry roasted seeds); ground
1/2 c rice flour
3 pcs chilies (green); slice
3 Tbsps of cashew nuts; coarsely ground
6 pcs saffron (strands); soak in 2 Tbsps of milk
3 Tbsps fresh coriander; chopped finely
Lukewarm water
Oil (or ghee) to use for frying
Instruction:
Mix flour (both wheat and rice) with salt and all the other ingredients (excluding the oil for frying) in a large bowl and gradually add the water (lukewarm) and mix to produce the dough.
Mix thoroughly and knead til smooth. Shape eight small-sized balls using the dough and with flour generously spread in a work table, roll the balls into six inch rounds.
Place in heated griddle then roast. Turn dough over when brownish speaks begin to appear under. Brush the surfaces with oil or ghee then sprinkle a teaspoon of oil or ghee around.
Continue to cook til brown on both sides. Do the same for the other doughs.
