Black Bean Chili With Toasted Spice Seasoning Recipe
Ingredients:
3 c black beans (dried); soak
8 c of water
1/2 c tomatoes (sun dried)
2 pcs peppers (jalapeno); mince
1.5 tsp ginger; grated
1 pc of bay leaf
2 Tbsps powdered chili
1 c of cilantro; chopped
1 tsp cumin (seeds)
1/2 Tbsp oregano; ground
4 c wheat (bulgur, uncooked)
1/2 c of water; boiling
pepper and salt to taste
1/2 Tbsps mustard (seeds)
1/2 tsp fennel (seeds)
Instruction:
Transfer soaked beans in colander to drain. Pour in a pot (large-size) then add water. Boil then add ginger, peppers and whole bay leaves and cilantro. Put lid on and simmer this for an hour to hour and a half.
Turn off heat and remove bay leaves. When the bean darken in color, sprinkle the powdered chili, the oregano and the tomatoes (dried). Stir and bring it to boil again.
Lower heat then simmer mixture for half an hour. Using a bowl, mix bulgur wheat with (boiling) water, put on cover the let it stand ten minutes.
Take one cup of cooked beans and puree (add some liquid from the cooked beans in the pan). Put back the puree in the pan. Add tomatoes and the bulgur. Put in seasonings and simmer the mixture for ten minutes.
Pop the mustard (seeds) in your heated pot (over moderate heat with the cover), then add the fennel (seeds).
Continue to cook until it stops popping and the fennel (seeds) darken in color. Pour the chili in, the cilantro then drizzle this with several drops of olive oil.
