Bombay Chicken & Rice Recipe
Ingredients:
3 lbs chicken; cut to pieces
Dash of salt
4 tsps of powdered curry
1 c of rice (Uncle Ben’s Converted Brand)
1 pack dried fruit (mixed, 6 oz) or
1 1/3 c of dried raisins & fruits
1/2 c of onions: chopped
1 tsp of salt
1/2 tsp of paprika
2 c of water
1.5 tsp of sugar
2 Tbsps of butter (or margarine); melt
1 parsley; chopped (optional)
Instruction:
Set oven at 375 deg F. Season sliced chicken using salt. Mix rice, onions, powdered curry, dried fruits, salt, sugar then water using a baking pan (12 inches by 8 inches).
Into a separate bowl, add paprika, butter then the rest of the powdered curry then brush mixture on the chicken.
Put spiced chicken on top of baking dish with rice mixture and tightly cover with some aluminum foil. Put in oven for an hour, then garnish w/parsley if preferred.
