Bombay Monk Recipe
Ingredients:
3 lbs chicken (broiler); cubed
1 c of rice (Uncle Ben’s)
6 ozs mixed fruit (dried)
1 pack of fruit & raisins (dried)
2 c of water
1/2 c of onion; minced
1/2 tsp paprika
4 tsps curry (powder)
1 1/2 tsp sugar
2 Tbsps butter or margarine; melted
1 parsley (optional); chopped
1 tsp salt
Instruction:
Set oven at 375 F. Remove the excess chicken fat then season it using a dash of salt. On a twelve by eight pan, put water and add in rice, fruits, sugar, onion, two teaspoons of curry and salt. Mix them well.
Add chicken on top of mixture. On another bowl, mix the butter, remaining two teaspoons of curry and paprika, then brush it on the chicken slices.
Seal the baking pan with foil then bake it for an hour and til chicken meat is tender, liquid mix is well absorbed. Use parsley to garnish.
