Bulgar Sweet (Lapsi) Recipe
Ingredients:
1 oz of margarine (corn oil)
1 1/4 c of bulgar (coarsely ground wheat)
1 Tbsp of fennel (seeds)
1/4 c of raisins (golden & seedless)
2 1/4 c of milk (nonfat)
1/4 c of powdered milk (nonfat)
1/2 c of sugar
1/2 tsp of crushed cardamom
1/4 tsp food coloring (yellow)
1/2 tsp of grated nutmeg
2 Tbsps of almonds; sliced fine
Pinch of saffron
Instructions:
Melt margarine using a heated saucepan and then saute bulgar with fellen. Stir frequently til bulgar is brown (light golden) in about ten to fifteen minutes.
Stir in raisins then continue to cook til raisins swell. Turn off heat. Gradually pour liquid milk and powdered milk, saffron, sugar then add food coloring.
Mix thoroughly and then allow to reach boiling point. Lower heat, put on cover then simmer til most liquid is fully absorbed.
Pour in cardamoms and nutmeg then fold into the mixture. Cook at lower heat at about twenty minutes more or til bulgar is fully cooked yet moist.
Add some water if it dries. Use the almonds to garnish when serving.
