Burfi Badam Pista (Milk Almond & Pistachio Nuts) Recipe

Ingredients:

9 ozs khoa
3 ozs sugar (castor)
1 oz of almonds
1/2 oz of pistachios
2 drops of kewra (essence)/1 drop of kewra (itar)
4 medium-sized silver leaves (opt)

Instruction:

To prepare khoa:

Boil two pints of milk (Jersey or buffalo milk) inside a heavy saucepan and stir continuously til this dries.

Keep temperature high to have a finished product that is white and not creamy. Let it cool. Thoroughly mix sugar (castor or powdered) with khoa.

Cook ten minutes stirring frequently to avoid it from sticking at the pan bottom. Add almonds then pistachio nuts the remove pan from heat then let it cool. Drizzle the kewra on mixture.

Turn over your tray then grease the back. Place khoa mix then roll evenly. You may use the leaves to decorate. Let it cool and when firm enough, cut to diamonds. Store in airtight containers.
