Calcutta Pasta Sauce Recipe
Ingredients:
2 Tbsps of butter
1/2 c of yogurt (plain)
1.5 Tbsps of crushed cumin seeds
1 Tbsp of paprika
2 Tbsps of freshly minced ginger
3 cloves of minced garlic
2 pcs of jalapeno peppers; seed and chop
3.5 c of tomatoes
1/2 Tbsps of garam masala
1 tsp of ground cardamom
1/2 c of cream (heavy)
1/4 c of freshly chopped cilantro
Instruction:
Melt butter in a saucepan and saute garlic and spices (cumin, ginger, jalapeno peppers and paprika) for about five minutes.
Stir in tomatoes, garam masala and cardamom then gently simmer til sauce thickens in about half an hour to an hour. Pour in yogurt, cream (optional) then cilantro.
Continue to cook but make sure it just simmers and does not boil. This can be served with pasta or if preferred, couscous.
