Carrots Peas & Potatoes Flavoured With Cumin Recipe
Ingredients:
2 pcs of large-sized carrots; diced
2 pcs of potatoes; boil, cool and cut to cubes
1 pc of scallion; thinly sliced
2 pcs of medium sized onions; coarsely chopped
3 Tbsps of mustard oil
1.5 tsp cumin (seeds)
2 pcs chilies (red, dried)
1.5 c of peas; remove shell
1/4 tsp of sugar
1 tsp of salt
Instruction:
Using a large-sized skillet, saute cumin (seeds) and let it sizzle (for about four seconds). Stir in chilies and cook another four seconds then add onions and cook five minutes.
Stir in carrots and peas and continue to cook and mix for a minute. Put on cover, reduce heat and simmer for about five minutes more.
Season with salt, then add sugar and cook three minutes more. Pour in sliced scallions, cook thirty seconds more then serve.
