Pitlai Recipe
Ingredients:
Oil
Curry leaves
Mustard seeds
Salt
Turmeric
Pepper corns
1/2 c of desiccated coconut
1&1/2 tsps of tamarind (paste)
3 pcs of chilies (green); sliced in half lengthways
1/2 c of toovar dal; cooked
3/4 can of peas (chick)
2 pcs of karela (bitter gourds)
Instructions:
Slice karela then cut to half inch cutlets. Saute karela and chilies. Mix in tamarind, two cups water, salt and turmeric. Simmer ’till karelas have become tender.
Mix in peas and sugar. Simmer. Using a different pan, saute coriander, dal, chilies (red) and the pepper corns. Mix in the desiccated coconut, then transfer to a food processor.
Mix a bit of tomato-paste. Mix together the karela and coconut mixture. Reheat mixture and simmer for a few more minutes.
