Kootu Recipe
Ingredients:
1/4 tsp of chili (powder)
1/2 c of yellow split peas
a pinch of turmeric
4 c of vegetables *
10 ozs of spinach
—Masala—-
2 tsp of urad dal
2 pcs of red chillies
1/3 tsp of pepper (black)
1 tsp of seeds (cumin)
3 Tbsps of coconut; grated
Instructions:
* combo of squash, beans, cabbage, etc.
Boil the peas and set aside. Next, boil veggies with powdered chili, turmeric and salt until cooked. Then add dal and masala.
Masala:
Cook pepper, chillies (red) and urad dal until it turns golden. Remove it from the stove then mix in cumin. When mixture cools, add coconut. Grind it with some water.
This serves 4.
