Matar Kochuri (Fried Bread Stuffed With Peas) Recipe
Ingredients:
2.5 Tbsps of ghee
Dash of cumin (seeds)
Dash of asafetida
1.5 c peas (green); boil then mash
3/4 tsp grated ginger
1/4 tsp of salt
Dash of turmeric
Dash of sugar
Dash of powdered garlic
1/4 tsp of cayenne powder
1/2 tsp of cumin; roasted & ground
1 luchi dough
Oil to deep fry
Instruction:
Heat ghee (oil) then stirfry cumin (seeds), ginger and asafetida for several seconds then add mashed peas, turmeric, sugar and garlic then season with salt.
Stir frequently for two to three minutes then add cayenne pepper and cumin powder (roasted) and stir for another five minutes (or til moisture evaporates). Turn off heat, cool and form to inch-sized balls.
Make luchi (refer to recipe) dough balls, fill the middle (press this with your thumb) with pea (mixture), close and flatten to rounds two to two and a half inches diameter.
Deep fry til brown, puffed and crispy. Serve this while still hot.
