Khombi Tarkari (Spicy Mushrooms With Ginger And Chilies) Recipe
Ingredients:
3 Tbsps of peanut oil
2 tsp of garlic; chopped finely
1 c of onion; chopped
1 Tbsps of ginger (fresh); chopped
2 pcs of minced green chilies
1/4 tsp of turmeric
1.5 lb of cleaned mushrooms; cut in 1-inch pcs
1/2 tsp of salt (coarse)
1 tsp of cumin seeds; crushed and roasted
2 Tbsps of corianer (fresh); chopped
Instructions:
Measure spices, piling them separately near stove. Inside wide pan, heat oil for about 3 min. over moderate heat.
Add onion then cook for around 3 min., constantly stirring. Mix in garlic, chilies & ginger then cook this for 2 min. more.
Next, add mushrooms, salt and turmeric. Cook mixture for around 15 min. until moisture has evaporated and mushrooms start frying.
Minimize heat, put in lemon extract and cumin. Mix them well then continue to cook this until mushrooms have absorbed lemon extract and appear fried (around 5 min).
Remove from heat then serve. This can be served warm, cold or at room temp., topped with coriander (chopped). This serves 4.
