Basmati Rice With Nuts & Dried Fruit Recipe
Ingredients:
1 & 1/2 c of uncooked rice (Basmati)
1 onion (small); sliced thinly
2 tsps of garlic (minced)
1/2 tsp of garam-masala
A pinch of pepper (white)
3 c of broth (chicken)
1/4 c of walnuts (toasted); chopped coarsely
1/4 c of chopped prunes (pitted)
2 Tbsps of coconut (toasted)
1 Tbsp of ginger; minced
2 chilies (Jalapeno); minced
2 Tbsps of oil
1/2 tsp of salt
1/4 c of dry apricots (dried)
1/4 c of toasted halved cashews
2 Tbsps of chopped onions (green)
1/4 c of plum-sauce
Instructions:
Have rice soaked in clean water enough to have it covered for about 30 mins. Drain.
You heat 3-qt pan in mid-heat ’til hot. You add onions and oil. Stir while cooking for a minute ’til onions are browned lightly.
Add garlic, ginger, garam-masala, chilies, pepper & salt. Cook it for about 10 secs. Add soaked rice then cook. Stir for a minute ’til mixture becomes well-coated w/ oil.
Pour broth in and allow to boil. Have it cooked without cover over mid-heat ’til liquid is at rice level. Adjust heat then cover & simmer for 15 minutes ’til rice becomes tender.
Transfer rice into serving plates then sprinkle w/ apricots, prunes, onions (green), coconut and nuts all over. Best when served w/ plum-sauce.
