Paneer – Ellen’s Fresh Cheese Curry Recipe
Ingredients:
Salt
3 Tbsps of coriander (fresh); minced
1 tsp of garam masala
1/2 lb of tomatoes; skins removed & sliced
2 pcs of chilies (green); minced
3/4 c of yogurt
1/2 lb of nuts (almonds or cashews)
1/3 c of currants
1 tsp of turmeric
2 Tbsps of garam masala
4 pcs of Laurel leaves
1 Tbsp of grated ginger
1/2 lb of paneer
1/2 c of ghee
1 Tbsp of coriander (seeds)
6 cloves of garlic; crushed
2 pcs of onions; minced
Instructions:
Place nuts inside a bowl and add one tablespoon butter or ghee. Pop inside the microwave on high to roast. Make sure to stir every minute to evenly cook it.
Afterwards, place one piece of onion, the coriander and garlic into a blender and blitz to paste. Melt ghee or butter in a saucepan then fry up cheese or paneer until lightly golden in color.
Drain them on paper towels. Saute the other piece of onion, ginger and Laurel leaves. Mix in turmeric, the garam masala then onion paste. Cook ’till the butter breaks away from the mixture.
Add currants and paneer, yogurt, tomato, salt and chili. Pour water in then simmer for twenty minutes. Garnish with coriander and garam masala prior to serving. Best served alongside naan bread.
