Kobi-Batata Shaak Recipe
Ingredients:
1 Tbsp of veg. oil
1 c of green cabbage; shredded
2 tsp of mustard or cumin seeds
1/2 tsp of cumin (powder)
2.5 c of potatoes; cut in 3/4-inch pcs
1.5 tsp of coriander (powder)
1/2 tsp of turmeric (powder)
1/2 tsp of red chili (powder)
2 Tbsps of chopped cilantro (fresh)
3/4 tsp of lemon extract
1/4 c of chopped tomatoes
Instructions:
Using big skillet, heat the oil over moderate heat. Then add mustard or cumin seeds. Do cook this for around a minute or ’til seeds have turned gray (mustard) or brown (cumin) and give off aroma.
Seeds are going to pop while being cooked. Make sure the seeds do not overcook. Put potatoes into skillet. Minimize heat, cover skillet and cook for around 15 min. Occasionally stir so mixture does not stick.
Mix cabbage, cooking them until semi-tender. Put in spices, stirring to coat veggies evenly. Cook for around 10 min. until veggies turn tender. Add tomatoes, cilantro and lemon extract. Serve.
This serves 2-3.
