Cauliflower & Potatoes With Black Mustard Seeds Recipe
Ingredients:
2.5 c potatoes; cut to cubes
1 small-sized cauliflower; break to flowerettes
2 tsp of mustard seed (black)
12 – 15 pcs fenugreek (seeds)
1 tsp of cumin (seeds); freshly grind
1/2 tsp of turmeric
6 Tbsps of oil (peanut)
1/2 tsp powdered pepper (red hot chili)
Dash of salt
2 Tbsps of garlic; minced
1 pc of chopped tomato
1 to 2 serran chilies; chopped fresh
1 c of cilantro (leaves); chopped finely
1 Tbsp of lemon juice
Instruction:
Soak potatoes in bowl of cool water then set this aside with cut cauliflower. Combine mustard and fenugreek into a small-sized bowl. Add cumin and dash of salt. Set this beside the cooking pan.
Mix in mustard and fenugreek seeds inside a hot pan with oil. Adjust heat to medium/moderate then mix (ground) cumin.
Stir-fry for a couple of seconds. Stir the garlic in, add tomatoes then green chilies and cook five minutes more.
Drain the potatoes and pour in pan together with the cauliflower and cook another five more minutes. Mix well, coating the vegetables well, adding half a cup of water then half a cup of cilantro leaves.
Put lid on then simmer till vegetables are soft, checking water often and adding (if needed). Salt, sprinkle squeezed lemon (juice), stir and then serve using the half cup of cilantro left.
