Chicken Dopiaza (Chicken In A Fried Onion Sauce) Recipe
Ingredients:
2-1/2 lbs of chicken; skinned
4 pcs of onions (medium); peeled
6 pcs of garlic cloves; peeled
1/2 tsp of turmeric (ground)
7 Tbsps of oil (vegetable oil)
1 pc of ginger (1-1/2 inches); peeled and chopped up
1 Tbsp of coriander seeds (ground)
1 Tbsp of cumin (ground)
1/2 tsp of cayenne
4 Tbsps of yogurt (plain)
2 pcs of tomatoes (medium); peeled and chopped finely
2 tsps of salt
2-1/2 c of water
1/2 tsp of garam masala
1 Tbsp of cilantro (fresh); chopped finely
Instructions:
Cut skinned chicken to serving sizes or pieces. Cut onions to half; the first half will be chopped finely then the other, halved lengthwise then sliced thinly crosswise.
Place onions, garlic, and ginger on the processor; blend them to make paste. Place oil on a nonstick deep frying pan above moderate heat. Add onions; cook till reddish-brown, while stirring constantly.
Get the cooked onions, but leave the oil. Place them on the plate. Turn off heat then add processed mixture or paste and turn on the heat again.
Cook for 3 to 4 mins, while stirring constantly, till paste becomes brown.
Add cumin, coriander, cayenne, and turmeric; stirring them once. Gradually add yogurt while stirring constantly. Add pieces of chicken; stir thoroughly and add water, salt, and tomatoes.
Stir thoroughly then let it simmer. Reduce the heat into low then cover; cook for 20 mins. Sprinkle garam masala then add cooked onions; stir thoroughly.
Cook above moderate heat, uncovered, for 7 to 8 mins or till sauce becomes thick and reduced in quantity. Skim fat off then place on warm platter. Sprinkle cilantro on top.
