Chicken Kurma Recipe
Ingredients:
4 pcs of cloves (whole)
3 pcs of cardamom pods
6 pcs of garlic cloves
1 pc of cinnamon stick
2 c of yogurt
10 pcs of almonds; blanched
1 Tbsp of coriander (seeds)
1 tsp of cumin (seeds)
1 tsp of turmeric
1 pc of ginger (fresh, 2 inch); peeled
Salt
3.5-4 lbs of chicken; boned, skinned, cut to 2-inch pieces
2 Tbsps of poppy seeds
3 pcs of onions (large); chopped finely
2 Tbsps of cashews
2 Tbsps of coconut (unsweetened, shredded)
2 Tbsps of ghee
4 pcs of fresh chiles (green); chopped finely
2 Tbsps of cilantro; chopped
Instructions:
Grind the cardamom, cloves, coriander, cumin, and cinnamon with the turmeric till powdered. Chop the ginger and garlic till turned to paste; mix them together with the powdered mixture.
Add the salt and the yogurt then add onto the chicken. Marinate for 2 to 3 hrs. Combine the poppy seeds, almonds, and cashews inside the blender; grind them. Combine them with the coconut; set on the side.
Heat the ghee on a skillet then cook the onions till golden. Add grinded mixture them mix thoroughly.
Place the chicken with the marinade on a pot then add the mixture of onion, green chiles, (1-1/2 cups) water, and (1 tablespoon) cilantro.
Cook till chicken becomes soft and the sauce becomes thick, uncovered. Garnish with remaining cilantro.
