Chicken Makhani (Butter Chicken) Recipe
Ingredients:
1/2 c of yogurt (plain)
1 tsp of ginger (fresh); crushed
1/4 tsp of food color (red)
1 tsp of salt
3 lbs of chicken (skinless) cut into pieces
Oil
4 Tbsps of butter (unsalted)
1 pc of cinnamon stick (1 inch)
6 pcs of cloves
1/2 c of sour cream (dairy)
6 pcs of cardamoms (green)
1 pc of bay leaf
2 tsps of almonds; ground
1 Tbsp of water
1/4 tsp of saffron; crushed
1/2 c of cream
Salt (to taste)
1/4 tsp of cornstarch
Instructions:
Combine yogurt, salt, ginger, and food color; rub onto the pieces of chicken. Marinate for over a night. Place inside a baking dish then brush oil on it.
Bake at 375 degrees F for 40 to 50 mins. Save its liquid (if any).
Melt the butter on the saucepan; fry the cinnamon, cardamoms, bay leaf, and cloves for a min. Add the sour cream along with the saved liquid from chicken.
Add cream and saffron then cover; simmer slowly for 5 to 6 mind. Add the pieces of chicken; adjust the seasoning then add the almonds.
Mix cornstarch with water then add onto the mixture. Stir constantly till thickened. Cover then simmer at about 3 to 4 mins.
