Chicken Moglai Balti Recipe
Ingredients:
1 pc of chicken (large); skinned, boned then cut to chunks
13 ozs of ghee (unsalted butter or clarified butter)
2 tsps of salt
2 pcs of onions (medium); grated
1 pc of ginger (fresh, 1-1/2 inch); peeled & grated
8 pcs of cloves of garlic (medium); crushed or minced
6 pcs of cardamoms (green); broken to slightly opened
2 pcs of cinnamon sticks (1-1/2 inch)
4 pcs of eggs; beaten lightly
4 Tbsps of sugar (refined)
6 Tbsps of almonds (ground)
27 oz of cream
Almonds; flaked (to garnish)
Instructions:
Heat ghee on a wok above medium heat then fry onions. Add salt then cook onions till translucent then add garlic, ginger, cinnamon, and cardamoms. Stir-fry till onions become golden.
Add chicken then cook while stirring frequently, at about fifteen mins. Combine eggs, almonds, cream, and sugar inside a bowl then mix thoroughly.
Reduce heat into gentle heat then pour mixture of egg onto the mixture inside the cooking wok.
Let it simmer slowly for 5 to 7 mins till chicken has become tender and cooked through. Don’t overcook. Garnish with almonds.
