Cholar Ghughni Recipe
Ingredients:
2-1/2 Tbsps of vegetable oil
2-1/2 c of onion; chopped finely
1 pc of bay leaf
1 Tbsp of minced garlic
1 Tbsp of minced ginger
1/2 tsp of turmeric
1/2 c of chopped tomatoes
2 tsps of cumin (ground)
2 tsps of coriander (ground)
1 tsp of chile (green); seeded and minced
1/4 tsp of salt
1-1/2 c of chick peas (cooked)
For the Garnish:
Onion rings (mild raw)
Tomatoes (Roma); chopped
Chopped cilantro
Instructions:
Heat the oil on a skillet then add onion and bay leaf; fry till they turn brown but don’t burn them, or about 15-20 mins. Stir them occasionally while they are cooking.
Add garlic and ginger; cook them for some mins while stirring occasionally. Add cumin, turmeric, chile, and coriander; mix them well then add chopped tomatoes and salt.
Lower the heat down a bit and cover; cook till tomatoes starts to be disintegrated and sauce becomes thick.
Stir frequently to avoid sticking and add more water when needed. Add the chick peas and cook them for another 5 mins.
Take out from the heat then let it stand, about some mins. Serve it with the garnishes.
