Chole “Bill & Jim” [chick Peas] Recipe
Ingredients:
A can of chick-peas (or garbanz)
1 tsp of cumin seeds
2 medium-sized potatoes
1 tsp of mustard seeds
1 Tbsp of veg. oil (garam masala)
1 lg onion; finely chopped
1 tsp of coriander
2-3 pods of cardamom
Instructions:
Put potatoes in saucepan and boil them for about 15 min. When cooked, remove from heat, letting them stay in water.
In large skillet, heat oil until extremely hot. Mix in mustard seeds, waiting until they pop. Also add in bay leaves, cloves and cardamom.
Stir for some time, then put in onions. Add remaining spices when onion turns golden. Mix chick-peas to mixture. Chop potatoes into bite-sized bits then put them into skillet.
Pour in garam masala. Stir chick-peas over moderate heat. Do this for about 5-7 min. w/o covering. Check potatoes; if not yet tender, add more water (1/4 cup) then cook them for 2 more minutes.
Add a pinch of salt. It’s now ready for serving. This serves 1.
