Chou-Chou Koot/Curry/Pooduthual Recipe
Ingredients:
2 medium-sized chayote squash
2 pcs of green chili; crushed
1/2 c of coconut; shredded
A pinch of turmeric
1 tsp of mustard seeds
1 pc of chili (red)
1 tsp of urad dal
A pinch of salt
1 can of oil
1-2 pcs of curry leaves
Instructions:
Peel squash and cube it. Cook this with some water, salt and turmeric. When firm and done, add green chili and coconut.
Pour the seasoning throughout the top. More of the liquid makes it kootu, poduthual is only moist.
Variations:
You can use plaintanos (green, raw or chiquita bananas — extremely green ) for vazhakai thoran/poduthual. You can also use butternut squash/red pumpkin similarly.
A ckakka thoran can also be done. Shred canned cooked green jackfruit (Thai). Mix with 5 to 6 tablespoons of oil, coconut (crushed), chili (green) and some salt.
Next, stir this well until heated thoroughly. Make sure mixture is moist. Much coconut is needed, with fresh ones being preferred. This serves 6.
