Easy Indian Recipe
Ingredients:
1 eggplant (medium)
1/4 tsp of kalonji seed
1 c of finely-chopped onions
1 Tbsp of grated ginger
1/4 tsp of turmeric
2 Tbsps of veggie oil
1/2 c of chopped tomatoes
1/2 tsp of sugar
2 chiles (green)
1 Tbsp of minced garlic
1 tsp of seeded minced chile (green)
1/2 tsp of salt
1 Tbsp of chopped cilantro
Instructions:
Smoke a medium-sized eggplant then mash and set it aside.
Have the oil heated in skillet. Add in kalonji and whole green chiles. Quickly fry then you throw in your onions and cook ’til browned.
You add ginger and garlic. Stir them together. Mix remaining chiles, salt, tomatoes, sugar and turmeric. Allow to simmer without cover ’til tomatoes will disintegrate and you are left w/ a thickened sauce.
Add mashed eggplant in then simmer w/ cover for about 10 mins, stirring occasionally. Remove it from the heat and sit for 14 mins. Garnish as desired.
