Indian Chicken Recipe
Ingredients:
8 ozs of breast fillet (chicken)
1/2 c of tamarind pulp
1 c of water (very hot)
1/4 c of sugar (brown)
2 tsps of cumin seeds; roasted and ground
2 tsps of powdered chili
1 tsp of garam masala
1 pc of onion (onion); chopped finely
2 pcs of lettuce leaves (iceberg); shredded
4 ozs of juice (lemon)
5 pcs of cilantro sprigs; chopped finely
Salt (to taste)
Lemon; cut to wedges
Instructions:
Boil chicken on water, seasoned with any seasoning or salt. When done, cut the fillets into cubes, about half inch.
Dissolve sugar with pulp from tamarind on a mixing bowl; stir thoroughly till dissolved completely.
Combine chicken, mixture of sugar/tamarind, cumin, powdered chili, garam masala, onion, juice, and lettuce; mix thoroughly. Season salt and let it sit for 10-15 mins. Place inside the refrigerator.
When serving, garnish fresh cilantro and wedges of lemon. Serve while cold.
