Indian Curry Recipe
Ingredients:
2 Tbsps of veg. oil
1/4 tsp of spice powder (five)
1.5 tsp of sugar
3 Tbsps minced ginger
1 pc of bay leaf
1/2 tsp of turmeric
3 Tbsps of chile (red) paste
2 tsp of ground cumin
3/4 tsp of salt
1/4 c cooked green peas
3/4 c of chopped tomatoes
1/2 c of water
2 c of floret (cauliflower)
1/2 lb of cubed potatoes
1 & 1/4 c of peeled and cubed sweet potato
1 c of sliced green beans
2 c of cubed eggplant
1/2 tsp of garam masala
Instructions:
Seethe oil then add some sugar. Cook this for some seconds. Minimize heat and put in spice (five) and bay leaf. Again, cook this for some seconds. Put turmeric, ginger, salt and cumin.
Stir then add in sweet potatoes, tomatoes, potatoes and some water. Cover mixture then simmer it for around 15 min.
Mix in paste (red chile), florets and eggplant. Cover then simmer mixture for around 10 min. Minimize heat, take off cover, simmering for around 10 more min.
If mixture starts sticking, sprinkle some warm water. Be mindful, though, that the sauce needs to be thick.
Put peas in then cover, simmering until cooked. Take away from stove. Blend garam masala, scatter cilantro then serve.
This serves 4.
