Karhi Poori Recipe
Ingredients:
1 c of flour (whole wheat pastry)
1 c of flour
3.5 tbsps of butter (sweet); softened
A can of oil
1 Tbsp of pepper (black)
1 tsp of salt
Instructions:
Sift salt and flours into bowl; next, add in pepper then cut butter ’til mixture likens coarse-grained oatmeal.
Slowly pour extremely hot water (1/2 cup and 3 tablespoons) and start gathering flours. Dough must be formed into ball, making sure it holds together. Dough should not be kneaded.
Break dough, forming around 50 balls. Cover them with damp tea towel. Next, over moderate flame, heat oil for around 1.5-2 in. inside wok.
Roll pooris while heating oil. Take dough balls piece by piece, flatten out then roll into circle with its diameter being 2 in. Fry all pooris.
One side is fried for 2-3 minutes until they are crisp and colored sandy (very light). Adjust heat when needed.
Once cooked, remove pooris from heat and transfer to paper towels to drain. Let them cool, storing them inside airtight bag or container.
Refrigeration is not needed. This serves 50.
