Kashmiri Spinach Recipe
Ingredients:
5 Tbsps of oil
2 & 1/2 lbs of chopped and washed spinach
1/8 tsp of ground asafetida (hing)
1/2 tsp of ground turmeric
1 & 1/4 tsp of salt
1/2 tsp of cayenne
1/4 tsp of garam masala
Garam Masala:
1 tsp of cumin seeds (black)
1 tsp of whole cloves
1 Tbsp of shelled cardamom seeds
1/3 pc of whole nutmeg
1 pc of cinnamon stick; broken in two
Instructions:
Using spice (or coffee) grinder, crush spices until they are extremely fine. Over intense flame, heat oil using a big pan. Mix in all spinach and asafetida.
While stirring all spinach, put following into the mixture: baking soda, cayenne, turmeric and salt. Continue cooking mixture and stirring until spinach wilts.
Add water (2 cups). Leaving it uncovered, cook for around 25 min. or ’til there is only a small amount of liquid left over moderate flame. Stir occasionally.
Lower heat then mash spinach using spoon (back). Still leaving it uncovered, continue cooking the mixture for around 10 min.
To jazz it up, sprinkle garam masala on top then mix. This will be serving around 6.
