Kathi Roll Of Nizam Recipe
Ingredients:
3 c of flour
2 Tbsps of coriander leaves
6 medium-sized potatoes; boiled, skinned and mashed
A pinch of salt
1 medium-sized onion; chopped finely
1 pc. of green chili; seeded and chopped up
1 can of oil or ghee
Instructions:
Sift salt (1 teaspoon) and flour in one bowl. Mix 2 tablespeens of oil or ghee. Slowly pour lukewarm water. Make sure to mix everything well, kneading until it becomes soft.
Grease a bowl, transfer mixture then cover it with one damp piece of cloth. Set aside. After 20 min., knead dough again then divide.
There should be nine portions. shaped into balls. Flatten each one into circular discs with 7-inch diameters.
Heat griddle and place rot. Spread 1-2 teaspoons of oil or ghee along edges. Don’t allow to crisp. Next, mix the mashed potatoes together with chillies, coriander & 1 teaspoon of salt.
Divide this into nine portions and stuff inside the rotis. Roll them like swiss rolls, securing each with a stick (cocktail or toothpick).
Cut some butter paper (9 pieces) into 4×4 sheets. Wrap every roll halfway. Serve these with some chutney (preferably mint).
Note: Boiled eggs (then mashed), chunked meat/ground chicken may also be substitutes for potatoes. Time to cook this is about 35 min.
