Khatte Channe Recipe
Ingredients:
1 Tbsp of tamarind paste
1 & 1/4 tsp of garam masala
1/2 c of veg. oil (light)
1.5 c of onions; sliced thinly
1/2 tsp of turmeric
1 Tbsp of grated ginger
1/2 tsp of red pepper
2 tsp of garlic; minced
1 c of tomatoes; chopped
1 & 1/4 tsp of cumin; ground
1/2 tsp of red pepper
Instructions:
In big pot, heat the oil over moderate heat and fry onions, constantly stirring for around 20 min. to keep from burning. Put garlic in and continue cooking for around 2 min.
Next, add pepper and turmeric. Rapidly stir mixture for some time before adding ginger and tomatoes. Cook this for around 5 min. having all fat separated from gravy.
Add chick-pea stock (1 cup) and tamarind. Cover the mixture and gently simmer for around 15 min.
Next, mix in the garam masala, cumin and chick-peas. Cook this for around 10 min. and do a salt check. Use the minced chilies and sliced onion for garnishing. Serve this with some Poori. This serves 6.
